What is the best thing to do with Butternut Squash ?
Something I know that continually nags away at most of you so you’ll be pleased to hear the green-fingered gourmet is here to finally bring about a solution to this vexed question that plagues so many of you

Our regular readers will be only too painfully aware of the Goldeneye Kitchen Garden ! Whilst in it’s twilight for the year there are still a few treasures to be had. No doubt you vividly remember when I first introduced you to this planting and the subsequent progress is also seared into your memory - well here is the penultimate result !

No doubt you’re reeling in awe - well prepare for more - here is the ultimate result !

Roast Butternut Squash

Roasted in olive oil and garlic along with sweet potatoes, home-grown shallots and some organic skin on carrots !
Delicious, healthy and cheap - how can you go wrong ?
If you’re going to give it a go here’s the quick and dirty …

    Pre heat a dish with a generous amount of good olive oil
    Dice said vegetables and add mixing to ensure a coating of oil
    Put in the top of a hot oven and mix every 15 minutes
    After half an hour season with sea salt and freshly cracked black pepper
    Now add the garlic and shallots (they’ll burn and taint the dish if added at the start)
    Give it another half hour mixing twice
    Serve with any main course and use the juice as a sauce to dress the veg

I may well bring you all even more highlights from the Goldeneye Diet :)
I may even go for a Michelin star such is my level of confidence :roll:
I may even try and unify the theory of relativity

If you’re looking for superb food to beat both the credit crunch and the belly bulge tune in again - you know it makes sense !

I may even do some consultancy work for LB - all he need do is supply the ingredients :)

    Rod,
    That butternut looks a corker! Cashback on that one. Would a sprig of thyme or sage go amiss on what is obviously ‘the best recipe for butternut squash’ ? :mrgreen:
    As to consultancy work, we need a handyman in the Lake District if you fancy emigrating!

    Sounds like you know what you’re talking about :)
    I would have put thyme in but for one thing - I didn’t have any !
    I tempted by the job offer - does it include fishing rights ?

    That butternut squash looks unique to us…. never seen the like before and we’re very, very, very jealous because ours didn’t grow at all :(

    The Coven’s workers have also enjoyed a roast butternut dinner tonight with pork… and chop smackingly good it was. If we’re going to take you seriously in the kitchen department you’ll have to grow some herbs which are far easier than vegetables and yours would no doubt reach Madagascan proportions :)

    without wishing to gloat there are loads more to come as well, it has been incredible and covered a much larger area than I anticipated.
    You’re right about the herbs and next years project is to organize a full herb garden !
