in terms of portion control you're right, the cous cous is a portion for 2 and does over balance the plate but contrary to popular belief I do eat quite a lot - and need it !
How else can a man do a proper days work ;)

As to LB's portion control, I once remember ordering a wild mushroom dish in one of his restaurants and told them 'don't stint on the bloody mushrooms'
I got such a plate full I could hardly see over it - that showed me !</description>

Twice in one week..... i am impressed again!   Well done that man!
You should be proud.

I think the cous cous looks a little overbearing and bland, try mixing more herbs with it, a handfull of R.C.  RC's fresh mixed, you will be mighty suprised.

To look anything like LB's...... 

Take off 90% of the veg and cous cous.  
Place one tablespoon of cous cous, place in the middle of the plate.
Scatter one slither of fennel, leek, courgette, and pepper around the edge of the plate.
Slice chicken into 2, balance on top of the cous cous.
Drizzle olive oil over chicken and veg.

And hey presto - you can charge - £29.95, (at least)
